I deleted initrd-xen and vmlinuz-xen from the install media. This forced vm-install to get vmlinuz-xen from the updated kernel-xen rpm file and to build it's own initrd-xen file. The built initrd-xen does have squashfs.ko. With new initrd-xen I got farther, now hung at the initial GUI install screen.
